According to the restaurant guide Gault Millau our chef Peter Girtler is “the most capable of all the advocators of fusion cuisine among creative chefs”. The star of the Michelin guide only confirmed this. After having been awarded these prizes in the last years, the Stafler family together with their longtime kitchen chef Peter Girtler decided to offer their guests even more delights of the palate and also of the sight: The former traditionally Germanic inn has been restyled into a true gourmet restaurant, getting also a new name: “Einhornstube” (which means “Hall of the unicorn”). This is the motto of chef Peter Girtler who gives the utmost importance to the quality of the produce: He uses for example vegetable varieties that were almost in disuse and he makes sure that the itinerary of salads and vegetables from the farmer to the consumer is the shortest possible. Therefore it is also necessary that there is a close cooperation with the local farmers who best know our traditional cuisine. A cook has to know about the working conditions and the effort of the farmer – only this way can he really get to know his produce and appreciate it even more.

Having been awarded 3 Gault Millau toques and 2 Michelin star, our kitchen chef Peter Girtler surely knows how to combine flavours and tastes of two different culinary traditions and re-interpret them in a way that satisfies both the lovers of traditional cuisine as well as sophisticated gourmets. For example he puts all the freshness of our alpine herbs into South Tyrolean products, mixes traditional farmers’ fare with Italian lifestyle and this way creates absolute highlights that you can enjoy whenever you want.
